Why the French Salt Meat Early

Salt goes on meat well before it meets heat, ideally the night before. Salting at the pan is too late: the salt has no time to travel and only seasons the surface.

Salt your next roast or steak and leave it uncovered in the fridge overnight. Pat it dry before cooking. The crust and the seasoning will both be better.
