Buy the simplest bread you can find. Read the label. If it has more than five ingredients, put it back. Better yet, find a local bakery that bakes daily. Eat it the same day.
French bakers judge flour by its ash content (type 55 for baguettes, type 65 for country bread), not protein content. The crumb should have irregular holes. Uniform holes mean industrial production. Press the crust. It should crackle and spring back.
