Why Oysters Belong to Winter

The French eat oysters in months containing an R, which is to say September through April. It is an old rule with a real basis: oysters spawn in summer and turn milky and soft.

Buy a dozen this month and eat them plain, or with nothing more than a squeeze of lemon. Skip the shallot vinegar the first time and taste what the oyster actually tastes like.
