Mushrooms are never washed under a tap in France. They are brushed. Water fills them, and a waterlogged mushroom steams in the pan instead of browning, which is the whole point of cooking it.

Brush your mushrooms clean with a dry cloth. Cook them in a hot dry pan first, with no fat, until they release and reabsorb their water. Add butter only then.
