The French Do Not Rinse Rice

For a pilaf, French cooks toast the dry grains in butter until they turn translucent at the edges, and never rinse. The surface starch is what binds the dish. Rinsing is for a different cuisine.

Toast rice in butter with a chopped shallot for two minutes before adding hot stock at a ratio of one and a half to one. Cover, do not stir, and let it rest ten minutes off the heat.
