How to Read a French Peach

The French judge stone fruit by smell at the stem, never by squeezing. A peach with no smell will never develop one. Pressure only tells you what the last shopper did to it.

At the market, lift the fruit to your nose at the stem end. If it smells of nothing, put it back regardless of colour. Colour is bred for shipping, not flavour.
